Le Gala des Grands Chefs – A successful 18th edition

Last weekend – October 26 & 27 2018 – foodies from Quebec and beyond gathered at Fairmont Le Manoir Richelieu for the 18th Gala des Grands Chefs, one of the most anticipated culinary events in Quebec !

This year, the 7 invited chefs from all-around the province were:

The two-day culinary event “gathered” more than 200 food enthusiasts in the epicurean destination of Charlevoix. The big night, Saturday, October 27th, was “Gala night” as all chefs had to work together to create a 8-course menu, each of them representing a different country. Master Sommelier Jessica Harnois was taking care of the wine pairings. And here are the results.

Chaga cream, green cabbage kimchi, burnt celeriac and snow crab

Chef: Émile Tremblay (Charlevoix)

First course: Oyster nuts served in a smoked beet jelly

Chef: Hakim Chajar (Montréal)

Second Course: Cobblestones charr grill, wild rice blown with St. Lawrence seaweed

Chef: Arnaud Marchand (Quebec)

Third Course: “Lobster roll”, American sauce and saffron mayonnaise

Chef: Francis Wolf (Eastern Townships)
Country: Italy

Fourth Course: Mushroom carpaccio and porcini cream, hazelnut tiles and coffee emulsion

Chef: Olivier Perret (Montreal)
Country: France

Fifth Course: Duck breast, grilled foie gras, apple cider and chervil juice

Chef: Baptiste Peupion (Montreal)
Country: Germany

Sixth Course: Onion tart, sour cream sherbet and 1608 cheese 

Chefs: Alexandre St-Amant Tremblay & Vianney Godbout (Montreal)
Country: Canada

Seventh Course: Maple leaves on a french toast, buttermilk ice cream and wild strawberries

 Chef: Pierre-Laurence Valton-Simard (Charlevoix)
Country: Germany

 

This culinary extravaganza is one of Quebec’s most-anticipated foodie events. Every year, some of the best chefs in the province are invited to create an unforgettable dinner and guests are invited to join the party as part of the event is open to the public, while Fairmont Le Manoir Richelieu is also offering tailor-made Gala-packages.
