Bivouac restaurant will open its terrace and dining room in the heart of the Quartier des Spectacles on June 10 (provided the Montréal region becomes an orange zone) to kick off the summer in accordance with developing public health guidelines. Part lounge, part craft bar and part modern bistro, Bivouac is sure to please locals and visitors alike. Located in DoubleTree by Hilton Montreal, it will be the perfect place for them to take a break from the chaos of city life and reconnect with their roots over a meal. On the menu, a unique boreal dining experience in the heart of downtown, with dishes featuring local products, decor by Atelier Zébulon Perron and a panoramic terrace to take full advantage of the view and the excitement surrounding the various events to take place this summer.

Bivouac restaurant – An urban, boreal dining experience

Bivouac will offer a whole new world of local Quebec tastes and sensations, brought to you by its artisans, entrepreneurs and conservationists, right in the Quartier des spectacles! To develop the boreal-inspired menu created by chef Xavier Dahan, each region of Quebec was visited and its cuisine explored in order to create a bar and restaurant menu that showcases all of Quebec. With no effort having been spared to train service teams, both in terms of food origins and pairings, customers will receive high-quality recommendations on available dishes and the best drinks to pair them with. Perfect for dates, outings with family and friends and business meetings alike, Bivouac will have three types of menus, as well as a children’s menu that will fully satisfy their little taste buds.

Place des Festivals each summer. With over 3,600 sq. ft. of outdoor space, a snack bar and an oyster bar, it offers a relaxed atmosphere in the heart of the hustle and bustle of Montréal creating the perfect environment where you will be able to enjoy an amazing drink from the cocktail menu developed in collaboration with Ateliers & Saveurs Montreal.

A unique design by Atelier Zébulon Perron

Wishing to offer a space where the quintessence of nature in all its forms– human, animal, botanical and mineral–can be explored, shared and appreciated, Bivouac turned to Atelier Zébulon Perron to create an interior design that makes the customer experience even better. The sublime, textured decor creates an immersive experience. All materials are in keeping with the boreal spirit of the restaurant—handmade light fixtures, custom benches, carefully chosen fabrics and even the flooring—nothing was overlooked. Every part of the decor is in symbiosis with the other parts, creating a warm and theatrical atmosphere.

Located at 1255 Jeanne-Mance Street on the 6th floor, Bivouac is the perfect place for drinks after work or before and after a show, for a dinner with friends or family, or for business meetings.

Monday to Wednesday: 5:00 p.m. to 10:00 p.m.

Thursday: 11 a.m. to 5 p.m. (terrace only) and 5 p.m. to 11 p.m.
