Groupe Golden Bird is launching Mezcla, its fifth establishment in the city, located within the Capisco restaurant itself

Montreal, November 6, 2025 — Today marked the opening of Mezcla, an upscale restaurant offering French-Peruvian cuisine in the heart of Old Montreal. The result of a fifth collaboration between Founder and Executive Chef, Marcel Olivier Larrea, entrepreneur David Dumay, and designer David Schmidt, Mezcla offers a unique culinary experience destined to delight fine dining aficionados. Nestled within Capisco, the last addition to the Golden Bird Group, Mezcla features a creative tasting menu and an accompanying beverage pairing, crafted by maître d’hôtel and founder/owner of Club Pelicano, Sébastien Jacques.

Despite its Franco-Peruvian identity, the name “Mezcla” means “mix”, reflecting the restaurant’s philosophy of culinary creativity. Golden Bird Group envisioned Mezcla as a large white canvas where everybody can freely express themselves without restrictions or limitations. This concept is at the heart of what the establishment does, and it’s why the team loves this name.

Mezcla is a refined and intimate experience, where gourmands from all over the city can discover the colorful plates and flavours that tell the stories of our roots”, emphasizes Founder, Executive Chef, and co-owner Marcel Olivier Larrea.

A vibrant and innovative menu

Mezcla’s opening menu blends French traditions and approaches with Peruvian techniques and flavours. Dishes such as razor clam and melon ceviche, a reinterpretation of papa rellena, served with Montreal grown mushrooms or carapulcra elevated with sea urchin roe. As well as serving impeccable seafood dishes, the menu also features incredible meat dishes, like lamb belly anticuchos and alpaca al carbón. Numerous other creations promise to elevate this gastronomic experience for our diners.Joseph David, head bartender at Capisco, has crafted an exclusive cocktail menu for Mezcla, adding another layer to the gastronomic experience.
